Love to Bake | Charlotte's Cupid Cupcakes

Valentine's Day is just around the corner. Whether you like to go big, give a little heart-felt gesture or get the kids involved in sharing the love with friends and family, we have just the thing. Our resident baker Charlotte is sharing a cupcake recipe that will win over every heart (trust us, we tried them and fell in love).

Give her Cupid Cupcakes a go following the steps below:

You will need:

Prep Time: 15 mins

Cooking time: 25 mins (dependent on oven)

To make around 12 Cupcakes:

- 200g self raising flour

- 200g caster sugar

- 200g unsalted butter

- Punnet of raspberries

- 2tsp lemon juice / zest of lemon

- 1tsp baking powder

- 4 eggs

- 200g white chocolate chips 

- Cupcake cases or greaseproof paper

- Cake rack for cooling

- Sprinkles and decorations to personalise

To make the icing:

- 150g salted butter

- 300 icing sugar

- 2tbsp boiling water

 

How it's done:

1. Preheat your oven to 170 and line a baking tray with cupcake cases or greaseproof paper

2. Cream together the butter and sugar in a mixing bowl

3. Add in your eggs one at a time, and mix to combine

4. Sift in the flour and fold into the mixture

5. Once combined into a smooth batter add the lemon juice and white choc chips

6. Spoon or pipe the mixture into cupcake cases evenly, halfway to filling pop a raspberry in the centre and cover with more mixture

7. Bake for approx 25 mins or when a skewer/end of knife comes out clean

8. Remove from oven and leave to cool on a cake rack 

 

Decorating:

1. Mix together butter and icing sugar

2. Add in zest of lemon, juice and boiling water for a smooth icing. Keep adding boiling water to achieve the thickness of icing you want

3. Fill a piping bag or sandwich bag with the icing and pipe onto the cooled cupcakes

4. Sprinkle and decorate to your heart's content

5. Gift your homemade tokens of love to someone special*

* please note, it's completely ok if this someone special is you, any excuse to eat yummy cupcakes is perfectly reasonable
